This is an easy to make oyster mushroom recipe. Oyster mushrooms are my favourite kind of mushroom. They are named so because of their contour that resembles oysters. Oyster mushrooms have a distinctive luscious taste that I prefer to preserve which is why I have used minimal seasoning and spices. You can use it as a side to pulao, fried rice or any other rice based dish. I made this dish as a side of fried rice. I still haven’t tried it with roti, so I can’t tell you whether it will go with roti or not. However, the taste itself is so incredible, I like to gobble up large quantities of the dish secretly before serving it ;)
Ingredients for Oyster Mushroom Sauté Recipe:

Oyster Mushrooms (stems trimmed and large ones diced into small pieces)

How to make Sautéed Oyster Mushrooms:
Step1: Wash the mushrooms thoroughly and soak in water for 30 minutes.
Step 2: Take a medium pressure cooker and add sufficient quantity of water.
Step 3: Add the mushrooms in the pressure cooker along with ½ tablespoon of salt and let it cook for 3 whistles.
Step 4: Take out the mushroom and let the water drain with the help of a colander.
Step 5: Now soak the mushrooms in cold water for few seconds and let the mushrooms dry.
Step 6: Take a large kadai/skillet and heat the oil until medium hot.
Step 7: Pour the mushrooms along with ½ teaspoon of salt and sauté it until golden.
Step 8: Add 2 teaspoons of vinegar and sauté till it evaporates.
Step 9: Finally season the dish with a pinch of black pepper and red chili powder and cumin seeds.
Step 10: Cover the kadai/skillet for a minute and then put it in a serving bowl.
How to serve Sautéed Oyster Mushrooms:
Serve them hot in a glass bowl. This is a main course dish, you can add it to the side of fried rice or pulao.
Tips for making the dish:
1. For better flavour use black pepper seeds and prepare black pepper powder at home by crushing the seeds using a mortar and pestle.
2. Don’t add additional salt during frying, since you have already added salt during boiling the mushrooms.
