Vegetable Fried Rice Recipe

This is a dish loved by all. From kids to elderly people, fried rice is something no one can ignore. However, the fried rice we make at home never seems to live up to the expectations compared to those restaurant quality dishes, do they? In this recipe I have used few easy tricks to get that exact restaurant quality fried rice you are looking for.  An added bonus is that it is extremely easy to cook and uses really simple and readily-available ingredients. I served the fried rice with  Sautéed Oyster Mushrooms. You can use any Chinese or Korean side dish of your preference.



Ingredients for Vegetable Fried Rice Recipe:

How to make Vegetable Fried Rice:

Step1: Keep all the vegetables soaked in water for 30 minutes.


Step 2: Now, dice the beans into short thin stripes. Dice the carrot into moderately thin stripes. Shred the capsicum into small pieces.


Step 3: Chop the garlic cloves.

Step 4: Heat a frying pan/kadai/skillet and pour 2 tablespoons of refined oil.

Step 5: When the oil becomes sufficiently hot, put cinnamon sticks, cardamom (elaichi) and whole cloves (lobongo) in the oil. Keep it for 1 minute or until the oil is fragrant and then take it out from the pan with the help of your ladle.

Step 6: Add the ginger paste and chopped garlic in the cooking pan and sauté for some seconds.

Step 7: Now, add the rice and stir fry for 10 seconds.

Step 8: Add all the diced vegetables, snow peas and fried baby corns in it and stir quickly.


Step 9: Now, add 1 tablespoon of soy sauce and one pinch of salt, pepper, sugar.

Step 10: Keep sautéing the rice until all the contents are mixed properly.

Step 11: Turn off the gas and put the lid on the kadai/skillet.


How to serve Vegetable Fried Rice:

Serve it hot. You may serve this on the side of any Chinese/Korean dish like Sautéed Oyster Mushrooms or Stir fried Hot and Sweet Mushrooms.



Tips for Vegetable Fried Rice Recipe:

1.    Many use star anise to fragrant the rice however it is not an easily available ingredient. As an alternative to star anise, I used a combination of cinnamon sticks, whole cloves and cardamom. It worked perfectly for me. If you wish you can still use star anise in the dish. Heat the oil and put 1 star anise for 30 seconds or until the oil is fragrant.

2.     After the oil has become fragrant, you may keep the cardamoms (elaichi) but the whole cloves (lobongo) and cinnamon sticks must be taken out.
