Baby corns are of low-calories, low-carb and high fiber content. They are nutritious and tasty. This is basically a stir fried baby corn recipe with a certain Indianisation to the taste. The main trick in cooking this dish is in sautéing the baby corns. The idea is to cook them till they are nice and crispy. Since, I don’t like my dishes too spicy I have added only ½ teaspoons of red chilli powder. However, depending on your taste, you may add more. But, be warned, the cumin seeds will already add a certain amount of zest to the dish.

How to make Spicy Baby Corn Fries:
Step 1: Wash the baby corns thoroughly and soak them in water for 30 minutes.
Step 2: Dice the baby corns into semi-thin slices.
Step 3:Put them in a pressure cooker. Add water and salt and let it cook for 3 whistles.
Step 4: Place the baby corns in a colander to drain off all the water.
Step 5:Add oil to a frying pan/kadai/skillet and let it heat to the sufficient temperature.
Step 6:Add cumin seeds and wait for it to splutter.
Step 7:Now add the baby corns and sprinkle chaat masala, chili powder over it.
Step 8:Fry while stirring for approximately 8-10 minutes or until golden brown and crispy.
How to serve Spicy Baby Corn Fries:
You can serve it as an evening snack or as a side in the main course. I used them as veggies in Fried Rice.
Tips for making Spicy Baby Corn Fries:
1. Always soak vegetables for 30 minutes before cooking them.
2. I diced the corns into small pieces since I wanted to add them in Fried Rice. You can dice/chop the corns in any manner/shape/size you prefer.
3. Do not fry without boiling the corns with salt. Else you won’t get the crispiness.
4. You may add 1 teaspoons of zachia along with the other seasonings.
5. Since I don’t like my dishes too spicy and the cumin seeds already add a veritable amount of “hotness” to the dish, I added ½ teaspoons of chilli powder. But if you want to crank up the heat-o-meter of this dish you may add more.
