About the Dish: 

The above picture is a takeout from Ashoka restaurant in Behala. It serves Chinese and Indian cuisines.

“Mutton Kosha” or “Kosha Mangsho” is basically the Bengali term for spicy mutton curry. It is a traditional Bengali side generally consumed with rice. The meat is marinated with common spices and ingredients like paste (garlic, ginger and onions), powdered coriander, yoghurt, powdered red pepper and salt. Moreover, you need to temper the dish with ingredients like bay leaves, sugar, mustard oil, cinnamon stick, cardamoms and uncrushed black peppers.

Moghlai paratha on the other hand is basically a Mughlai stuffed flat bread. The dough is made mainly with wheat and milk. The stuffing is made of spiced minced meat (also known as Keema/Kheema). Generally mutton is the popular choice of meat but you can opt for chicken or any other type of protein (like duck, lamb, etc) as per your preference. This spicy Kheema/Keemais mixed with vegetables, ghee (clarified butter) and the whole thing is cooked in ghee/sunflower oil.
